Equipment Required

  • Ladle (used to cover the eggs with masala) .

Ingredients

Masala Paste Ingredients (Roast & Grind)

  • 🫒 Oil about half teaspoon(Used for roasting the spices).
  • 🌶️ Biyagi chilies 10 (If unavailable, Kashmiri red chilies can be used instead for nice color).
  • 🌿 Coriander seeds 2 tablespoons.
  • ⚫ Peppercorns 1 teaspoon.
  • 🌟 Fennel seeds 1 teaspoon.
  • 🟤 Cumin seeds 1 teaspoon.
  • Fenugreek seeds very few.
  • Tamarind a few bits.
  • 🧄 Garlic (eight large cloves Adde to mixer jar uncooked).
  • 💧 Water (accordingly Added to get nice fine masala paste).

🥚 Egg Coating Masala

  • 🧂 Salt 1.5teaspoons
  • 🟡 Turmeric powder half teaspoon
  • 🌶️ Kashmir red chili powder 2 teaspoons
  • 🥚 Boiled Eggs as per your serving (Requires a few

Roast/Curry Base

  • 🧈 Ghee 2 tablespoons (Can use half oil and half ghee instead).
  • 🧅 Onions four large, finely chopped.
  • 🍃 Fresh curry leaves (a few).
  • 🍅 Tomatoes three small (roughly chopped).
  • 🧂 Salt 1 teaspoon.
  • 🟫 Jaggery 2 teaspoons.
  • 🌿 Fresh coriander leaves (a few chopped).

Instructions

1.Roast Spices for Paste: Add about half teaspoon of oil to a nice white pan . Add 10 Biyagi chilies (or Kashmiri red chilies), 2 tablespoons of coriander seeds, 1 teaspoon peppercorns, 1 teaspoon fennel seeds, 1 teaspoon cumin seeds, very few fenugreek seeds, and a few bits of tamarind. Continue roasting on low flame for another 2 minutes . Turn off the heat, transfer the ingredients to a plate, and cool them completely .

2.Grind Masala Paste: Transfer the red chilies first, followed by all the roasted ingredients, to the mixer jar . Add eight large cloves of garlic . Grind all ingredients first without adding any water, then add water accordingly to get a nice fine masala paste . Remove the paste and keep it aside .

3.Prepare and Coat Eggs: On a plate, mix 1 and 1/2 teaspoons of salt, half teaspoon turmeric powder, and 2 teaspoons of Kashmir red chili powder. Make a few slits in the boiled eggs . Roll the eggs in this basic masala mix, ensuring the egg is completely coated . Keep the coated eggs aside.

4.Saute Onions:In a nice deep pan, add 2 tablespoons of ghee . Add four large, finely chopped onions . Sauté the onions on high flame for roughly about 10 minutes until they turn a lovely golden brown color .

5.Cook Masala Paste: Reduce the flame and add the ground masala paste [3]. Mix the paste along with the onions and cook this masala until the raw smell goes

6.Add Curry Leaves:Add a few fresh curry leaves and mix them in.

7.Add Tomatoes and Salt: Add three small, roughly chopped tomatoes . Add 1 teaspoon of salt and mix everything together.

8.Simmer Masala:Add 1 cup of water. Keeping the flame on medium, cook the masala for about 10 minutes .

9.Balance Flavors: After 10 minutes (when the ghee has separated), add 2 teaspoons of jaggery and mix it all in.

10.Add Eggs: Gently drop the coated eggs into the masala . Use a ladle to gently add the masala on top of the eggs, covering them . Place the lid on the pan and let this cook for another 2 to 3 minutes
