Ingredients for Pudina Chicken Curry

For the Marination

  • Chicken pieces (with bone): 1 kilo🍗
  • Salt: 2 teaspoons🧂
  • Lemon juice: Juice of one large lemon 🍋
  • Ginger garlic paste: 4 teaspoons🫚
  • Turmeric powder: 1 teaspoon🟡
  • Red chili powder: 3 teaspoons🌶️
  • Garam masala powder: One and a half teaspoons🪔
  • Curd (Yogurt): 3/4 to 1 cup🥛 

For the Cooking Base

  • Oil: 2 tablespoons🛢️
  • Ghee: 1 tablespoon🧈
  • Whole spices: A mix of cinnamon, clove, cardamom, and cumin seeds
  • Onions: 3 large, thinly sliced🧅
  • Water: 1/4 cup💧
  • Pepper: 1/2 teaspoon (for finishing)⚫

For the Grinding Paste (Pudina Base)

  • Green chillies: 5🌶️ 
  • Mint leaves (Pudina): 1 large bowl🌿
  • Coriander leaves: 1 small bowl🌱 
  • Water: Just about 1 tablespoon (for grinding)💧

Instructions for Pudina Chicken Curry

Marinate the Chicken

In a large bowl, take the 1 kilo of chicken pieces. To this, add all the marination ingredients: 2 teaspoons of salt, lemon juice, 4 teaspoons of ginger garlic paste, 1 teaspoon of turmeric powder, 3 teaspoons of red chili powder, 1.5 teaspoons of garam masala powder, and 3/4 to 1 cup of curd.

Rest the Chicken

Mix everything thoroughly, massaging the marinade into the chicken pieces. Let the chicken rest for about 30 minutes to absorb all the flavors.

Prepare the Cooking Base

Heat a kadai or a heavy-bottomed pan over medium heat. Add 2 tablespoons of oil and 1 tablespoon of ghee.

Temper the Whole Spices

Once the oil is hot, add the whole spices (cinnamon, clove, cardamom, and cumin seeds). Let them sizzle for a few seconds until fragrant.

 Sauté the Onions

Add the 3 thinly sliced onions to the kadai. Sauté them, stirring occasionally, until they turn a nice golden color. This should take about 5 to 7 minutes.

Cook the Marinated Chicken

Now add the marinated chicken to the kadai. Mix well with the onions and cook until the chicken is no longer pink on the outside.

Simmer the Curry

After the initial cooking, add about 1/4 cup of water. Close the kadai with a lid and let the chicken cook on a medium flame for about 10 minutes.

Prepare the Mint & Coriander Paste

While the chicken is cooking, prepare the fresh green paste. In a mixer jar, combine 5 green chillies, a large bowl of mint leaves (pudina), a small bowl of coriander leaves.

Then add about 1 tablespoon of water. Grind everything into a smooth, fine puree.

Add the Green Paste

Once the chicken is cooked through, add the freshly ground mint-coriander paste to the kadai.

Mix everything vigorously until the paste is well blended into the curry.

 Final Seasoning and Finish

Let the curry cook for another 5 minutes so the raw aroma of the greens mellows down. Check for seasoning and add more salt if needed. Finally, add half a teaspoon of pepper for a final kick of flavor and aroma.
