Step-by-Step Instructions

Part A: Preparing the Masala Powder

1. Roast the Base Spices

Heat 2 teaspoons oil in a pan. Add chana dal and roast lightly. Then add cumin seeds, mustard seeds, and red chilies. Roast until fragrant and the mustard seeds begin to pop.

2. Add Aromatics

Once the spices are roasting well, add garlic cloves (with skin) and tamarind pieces. Continue roasting on low flame until everything is well combined and aromatic.

3. Toast the Coconut

Add freshly grated coconut and roast for 2 minutes until all moisture evaporates and the coconut turns light golden.

4. Final Seasoning

Sprinkle asafoetida and rock salt over the mixture. Roast for one final minute then turn off the heat.

5. Grind to Perfection

Transfer the roasted mixture to a plate to cool completely. Once cooled, grind to a coarse powder in a mixer jar.

6. Storage Solution

Store the homemade masala powder in an airtight container for future use or proceed to make the rice immediately.

Part B: Assembling the Masala Chitranna

1. Roast the Peanuts

Heat 2 tablespoons oil in a wide kadai. Add raw peanuts and roast until they turn crunchy and golden brown.

2. Toast the Dals

Add chana dal and urad dal to the kadai. Continue roasting until the dals turn a beautiful golden brown color.

3. Temper the Spices

Add mustard seeds, cumin seeds, and halved red chilies. Let them splutter and release their aromas.

4. Add Fresh Flavors

Toss in fresh curry leaves and sprinkle turmeric powder. Mix well to combine all the flavors.

5. Incorporate the Masala

Add 2 tablespoons of your freshly prepared masala powder. Keep the flame low and mix everything thoroughly.

6. Combine with Rice

Add cooked rice to the kadai. Gently mix until the rice is evenly coated with the masala and spices.

7. Final Seasoning

Taste and adjust with more masala powder and salt if needed. Drizzle with ghee for that final flavor enhancement.

8. Serve Immediately
