“Ingredients for Andhra Style Chicken Fry”
1. Marination Ingredients
- Chicken (with bone): 1 kilo 🍗
- Salt: About 1 teaspoon 🧂
- Turmeric powder: 1/2 teaspoon 💛
- Red chilli powder: About 4 teaspoons 🌶️
2.Masala Powder (Roasting and Grinding)
- Whole coriander seeds: 1.5 tablespoons
- Cumin seeds: 1 teaspoon
- Fennel seeds: 1 teaspoon
- Whole peppercorns: 1 teaspoon ⚫
- Cardamom: 3 🫛
- Cloves: 4
- Cinnamon: 2 small pieces 🪵
- Red chilies: 6 🌶️
- Kashmiri red chillies: 4 (for rich color) 🌶️
3. Frying and Cooking Ingredients
- Oil: About 4 tablespoons 🛢️
- Medium sized onions (finely chopped): 4 🧅
- Green chilies (finely chopped): 2 🫑
- Curry leaves: A few (added with onions) 🍃
- Ginger-garlic paste: 2 heaped teaspoons 🧄🧄
- Masala spice powder: The entire amount prepared above (added in two intervals) 🍛
- Salt: 1 teaspoon (adjust to taste) 🧂
- Curry leaves: A few (for finishing) 🍃
- Chopped coriander leaves: Some (for finishing) 🌿

Instructions for making spicy Andhra Chicken Fry

Marination: First, in a large bowl, combine 1 kg of chicken with 1 tsp salt, 1/2 tsp turmeric, and 4 tsp red chilli powder.
Next, mix well, ensuring each piece is coated. Finally, let it marinate for at least 15 minutes.

Preparing the Masala Powder: Heat a pan over medium heat. Then, add all the whole spices listed under “Masala Powder.”Dry roast them, stirring constantly, until they become fragrant. However, be careful not to burn them.

Turn off the stove, transfer the ingredients into a plate, and cool them completely.Transfer the cool ingredients to a mixer jar and grind it to a nice fine powder. Set the powder aside

Making the Chicken Fry:o begin, heat 4 tbsp of oil in a large kadai over medium heat.Then, add the finely chopped onions and slit green chilies. Saute until the onions turn a golden brown.Next, add a sprig of curry leaves and stir for a few seconds.

Now, add the marinated chicken and ginger-garlic paste. Cook for 8-10 minutes, until the chicken is no longer pink and has released its juices.

At this point, add 2 tablespoons of the freshly ground masala powder. Cook for another 5 minutes, allowing the flavors to combine. Afterwards, add the remaining masala powder and salt. Immediately, reduce the heat to low.
Finally, continue cooking for another 10-12 minutes, stirring occasionally, until the chicken is fully cooked and the dish is dry.

To finish, garnish with fresh coriander leaves
