Instructions for making Amma Style Chicken Fry
Step 1: Marinate the Chicken

First, take your 1 kg of washed chicken pieces and place them in a large bowl. Next, add 1 teaspoon of turmeric powder, 2 teaspoons of red chili powder, 1 teaspoon of salt, and 2 tablespoons of curd. Then, mix everything thoroughly until the chicken is fully coated. For the best result, let the chicken marinate for 30 minutes at room temperature.
Step 2: Cook the Chicken

- After marinating, transfer the chicken and all the marinade into a pan. Cook it over a medium flame, using the chicken’s own juices.

- After 5 minutes, add 2 teaspoons of ginger-garlic paste and mix it in well. At this point, you will see more moisture release.

- Now, cover the pan with a lid and let the chicken cook for another 10 minutes. Once the chicken is almost fully cooked, turn off the heat and set it aside.
Step 3: Prepare the Masala Base

- Meanwhile, in a separate pan, heat 4 tablespoons of oil over medium heat. Once the oil is hot, add a few pieces of cinnamon, cloves, and cardamom pods. Sauté them for a few seconds until they become fragrant.

- Then, add the roughly chopped onions, slit green chilies, and curry leaves. Continue sautéing until the onions turn a lovely golden brown color.

- Finally, add the roughly chopped tomatoes and cook for 2-3 minutes until they begin to soften.

- Now, it’s time to bring everything together. Gently transfer the partially cooked chicken and its juices into the pan with the masala. Mix everything well, ensuring the chicken pieces are fully coated.

- To build the final layer of flavor, add 1 teaspoon of cumin powder and 2 teaspoons of coriander powder. Mix thoroughly until everything is well combined.

- For the final touch: Add a generous amount of freshly chopped coriander leaves and gently toss them into the chicken. Finally, let it cook for another 2-3 minutes so all the flavors can meld together.

- Serve your delicious Amma Style Chicken Fry hot.
