Ingredients

  • 1 tsp salt 🧂
  • 1 tsp turmeric powder
  • 1 tsp pepper powder 🌿
  • 2 tsp red chili powder 🌶️
  • 1 tsp coriander powder
  • 1 tsp cumin powder
  • 1 tbsp corn flour 🌽
  • 1 tbsp rice flour 🍚
  • 2 tsp ginger garlic paste 🧄
  • Juice of half a lemon 🍋
  • 1 egg 🥚

For the Fried Rice

  • Oil, for deep frying + 2 tbsp + 2 tsp 🛢️
  • 1 tbsp finely chopped ginger 🧄
  • 2 large green chilies, finely chopped 🌶️
  • 1 large onion, thinly sliced 🧅
  • 1 cup finely chopped beans 🫘
  • 1 cup finely chopped carrots 🥕
  • ½ cup finely chopped capsicum (bell pepper) 🫑
  • 1 cup sliced cabbage 🥬
  • 1 tsp salt (for veggies) 🧂
  • 1 tsp black pepper powder 🌿
  • 2 tsp red chili flakes 🌶️
  • 2 tsp soy sauce 🥡
  • 2-3 eggs, whisked 🥚
  • Salt and pepper, to season the eggs
  • 3 cups cooked and cooled Basmati rice 🍚
  • Spring onions, finely chopped, for garnish 🌱

Instructions for Street Style Chicken Fried Rice

Part 1: Preparing the Crispy Chicken

Marinate the Chicken: In a large bowl, combine the washed chicken pieces with all the marination ingredients: salt, turmeric, pepper, red chili powder, coriander powder, cumin powder, corn flour, rice flour, ginger garlic paste, lemon juice, and one egg.

Mix Thoroughly: Mix everything well, ensuring the egg and spices coat every piece of chicken evenly.

Rest: Allow the chicken to marinate for about 1 hour for the best flavor and tenderness.

Deep Fry: Heat oil for deep frying in a heavy-bottomed pan or kadai over medium heat. Once hot, gently add the chicken pieces in small batches to avoid crowding.

Cook Until Crispy: Fry until the chicken is cooked through and turns a beautiful golden brown color.

Drain: Remove the fried chicken and place it on a plate lined with paper towels to drain excess oil. Repeat with the remaining chicken.

Chop: Once slightly cooled, cut all the fried chicken pieces into small, bite-sized bits. Set aside.

Part 2: Assembling the Fried Rice

Stir-Fry Aromatics: Heat a large wok or a wide pan over a high flame. Add 2 tablespoons of oil. Add the chopped ginger, green chilies, and sliced onion. Sauté for about a minute until fragrant.

Add Vegetables: Add the chopped beans, carrots, capsicum, and cabbage. Continue to sauté on a high flame for about 2 minutes. The vegetables should remain crisp.

Season: Add 1 teaspoon of salt, black pepper powder, and red chili flakes. Mix well. Follow with the soy sauce, stirring to combine.
