For the Marinade:

  • 1 kg (2.2 lbs) chicken pieces (with bone) 🍗
  • 1 teaspoon turmeric powder 🌕
  • 2 teaspoons red chili powder 🌶️
  • 1 teaspoon salt 🧂
  • 2 tablespoons curd (yogurt) 

For Cooking the Chicken:

  • 4 tablespoons oil 🛢️
  • A few pieces of cinnamon 🪵
  • A few cloves 🌰
  • A few cardamom pods 🫘
  • 3 medium-sized onions, roughly chopped 🧅
  • 4 green chilies, slit 🌿🌶️
  • A few sprigs of curry leaves 🍃
  • 2 medium-sized tomatoes, roughly chopped 🍅
  • 2 teaspoons ginger-garlic paste 🧄🧄

Instructions for making Amma Style Chicken Fry

Step 1: Marinate the Chicken

First, take your 1 kg of washed chicken pieces and place them in a large bowl. Next, add 1 teaspoon of turmeric powder, 2 teaspoons of red chili powder, 1 teaspoon of salt, and 2 tablespoons of curd. Then, mix everything thoroughly until the chicken is fully coated. For the best result, let the chicken marinate for 30 minutes at room temperature.

  • After marinating, transfer the chicken and all the marinade into a pan. Cook it over a medium flame, using the chicken’s own juices.

  • Meanwhile, in a separate pan, heat 4 tablespoons of oil over medium heat. Once the oil is hot, add a few pieces of cinnamon, cloves, and cardamom pods. Sauté them for a few seconds until they become fragrant.

  • Then, add the roughly chopped onions, slit green chilies, and curry leaves. Continue sautéing until the onions turn a lovely golden brown color.
